  • 1 package (10 ounces) mini marshmallows
  • 1 teaspoon vanilla extract
  • 6 cups puffed rice cereal
  • 1/2 cup soft caramel candies, unwrapped
  • 1/4 cup heavy cream
  • 1/2 teaspoon flaky sea salt, plus extra for topping

Instructions

  1. Lightly grease a 9×13 inch baking pan. Set aside.
  2. In a large saucepan over medium-low heat, melt the butter.
  3. Add the unwrapped caramel candies and heavy cream to the melted butter. Stir constantly until the caramel is completely smooth and melted. Remove from heat.
  4. Stir in the vanilla extract.
  5. Add the marshmallows to the caramel mixture. Stir gently until they are fully melted and combined.
  6. Pour the puffed rice cereal into the marshmallow-caramel mixture. Fold gently until the cereal is evenly coated. Do not overmix.
  7. Transfer the mixture to the prepared baking pan. Lightly butter your hands or a spatula and press the mixture evenly into the pan.
  8. Immediately sprinkle the top evenly with the flaky sea salt.
  9. Let the treats cool completely at room temperature for at least 1 hour before cutting into squares.

Notes

  • For the best chew, do not press the mixture into the pan too firmly.
  • Use good quality soft caramels for the richest flavor.
