  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • For the Filling:
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the Salted Honey Drizzle:
  • 1/4 cup honey
  • 1/4 teaspoon sea salt

Instructions

  1. Preheat your oven to 350 degrees F. Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Prepare the crust: Combine graham cracker crumbs and 1/4 cup sugar in a bowl. Pour in the melted butter and mix until the crumbs are evenly moistened.
  3. Press the crumb mixture firmly into the bottom of the prepared pan. Bake for 10 minutes. Remove from the oven and set aside.
  4. Prepare the filling: In a large bowl, beat the softened cream cheese and 1 cup sugar until smooth. You want no lumps remaining.
  5. Beat in the eggs one at a time, mixing just until combined after each addition. Stir in the vanilla extract. Do not overmix the batter.
  6. Pour the cream cheese filling evenly over the warm crust.
  7. Bake for 25 to 30 minutes. The edges should look set, and the center should have a slight jiggle.
  8. Let the bars cool completely on a wire rack. Then, chill in the refrigerator for at least 4 hours, or preferably overnight, before slicing.
  9. Prepare the drizzle: Whisk together the honey and sea salt in a small bowl.
  10. Once the bars are chilled and cut, drizzle the salted honey mixture over the top of each bar just before serving.

Notes

  • Make sure your cream cheese is truly at room temperature; this prevents lumps in your filling.
  • For clean slices, use the parchment paper overhang to lift the entire cooled cheesecake out of the pan before cutting.
  • You can use any type of cracker crumb you prefer, such as vanilla wafers or shortbread cookies, for a variation on the crust.
