  • 1 pound Italian sausage (casings removed)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 (16 ounce) package refrigerated cheese tortellini
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Brown the Italian sausage in a large skillet over medium-high heat. Break it up as it cooks. Drain off excess grease.
  2. Add the olive oil, chopped onion, and minced garlic to the skillet. Cook until the onion softens, about 5 minutes.
  3. Stir in the diced tomatoes, tomato sauce, oregano, basil, and red pepper flakes if you are using them. Cook for 2 minutes.
  4. Pour in the chicken broth. Bring the mixture to a simmer.
  5. Add the refrigerated tortellini to the skillet. Cook according to package directions, usually about 5-7 minutes, or until the tortellini are tender.
  6. Reduce the heat to low. Stir in the heavy cream and Parmesan cheese. Heat through gently; do not boil.
  7. Taste the skillet mixture. Add salt and pepper as needed.
  8. Serve immediately, garnished with fresh parsley.
