Ingredients
Scale
1 pound cremini mushrooms, stems removed and finely chopped
1 pound sweet or hot Italian sausage, casings removed
4 ounces cream cheese, softened
1/2 cup grated Parmesan cheese, plus more for topping
1/4 cup panko breadcrumbs (optional, for texture)
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 375 degrees F. Lightly grease a baking sheet.
Wipe the mushroom caps clean with a damp paper towel. Gently remove the stems and finely chop the stems; set the caps aside.
In a large skillet over medium heat, cook the Italian sausage, breaking it up with a spoon, until it is fully browned. Drain off any excess grease.
Transfer the cooked sausage to a medium bowl. Add the chopped mushroom stems, softened cream cheese, Parmesan cheese, panko breadcrumbs (if using), minced garlic, parsley, salt, and pepper. Mix everything together until well combined. This is your filling.
Spoon the sausage mixture evenly into the mushroom caps, mounding the filling slightly.
Place the stuffed mushrooms on the prepared baking sheet. Sprinkle a little extra Parmesan cheese over the top of each one.
Bake for 20 to 25 minutes, or until the mushrooms are tender and the filling is lightly golden brown. For smaller mushrooms, check at 18 minutes.
Serve these party finger foods warm.
Notes
For a low-carb option, skip the panko breadcrumbs and add 1/4 cup finely chopped cooked bacon instead.
You can prepare these make ahead stuffed mushrooms up to 24 hours in advance. Cover the assembled mushrooms and refrigerate. Add 5 minutes to the bake time if baking directly from the refrigerator.
If you want to use an air fryer stuffed mushrooms method, cook at 350 degrees F for 10 to 12 minutes, checking for doneness.
These hold well on a warm platter for about an hour, making them great holiday appetizer platter additions.
