1 tablespoon olive oil
1 small yellow onion, finely chopped
2 cloves garlic, minced
1 teaspoon dried sage
1/4 teaspoon nutmeg
1 (15 ounce) can pumpkin puree
1 cup vegetable broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese, plus more for serving
Salt and freshly ground black pepper to taste
12 ounces pasta of your choice
Instructions
Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic, sage, and nutmeg. Cook for 1 minute more until fragrant.
Stir in pumpkin puree and vegetable broth. Bring to a simmer.
Reduce heat to low and stir in heavy cream and Parmesan cheese. Cook until sauce is smooth and heated through, about 5 minutes. Do not boil.
Season with salt and pepper to taste.
Meanwhile, cook pasta according to package directions. Drain pasta, reserving about 1/2 cup of pasta water.
Add drained pasta to the skillet with the sauce. Toss to coat. If sauce is too thick, add a little reserved pasta water until desired consistency is reached.
Serve immediately, garnished with extra Parmesan cheese.
Notes
For a lighter sauce, you can substitute half-and-half for heavy cream.
Fresh sage can be used instead of dried. Use 1 tablespoon of fresh chopped sage.
This sauce is also delicious with roasted butternut squash instead of pumpkin puree.
