Learn how to quickly sear sushi grade yellowfin tuna to achieve a beautiful crust and a rare, tender center. This Asian tuna recipe is a healthy, quick seafood dinner.

  • 2 (6 ounce) sushi grade ahi tuna steaks
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon black pepper
  • 1/4 cup sesame seeds (mixed black and white)

Instructions

  1. Pat the ahi tuna steaks completely dry using paper towels. This step is key for a good sear.
  2. In a small bowl, whisk together the sesame oil, soy sauce, grated ginger, and minced garlic. Brush this mixture evenly over all sides of the tuna steaks.
  3. Place the black and white sesame seeds on a shallow plate. Press each side of the tuna steaks firmly into the seeds until they are well coated.
  4. Heat a heavy-bottomed skillet, such as cast iron, over high heat until it is very hot, almost smoking.
  5. Carefully place the sesame-crusted tuna steaks into the hot, dry skillet. Do not move them for 1 to 1.5 minutes.
  6. Sear the first side for 1 to 1.5 minutes until a dark crust forms. Flip the steaks and sear the second side for another 1 to 1.5 minutes for rare to medium-rare.
  7. Remove the tuna from the pan immediately. Let the steaks rest on a cutting board for 5 minutes before slicing.
  8. Slice the tuna against the grain into half-inch thick pieces. Serve right away.

Notes

  • For the best results, chill your seasoned tuna steaks for 15 minutes before searing; this helps keep the center cooler while the outside sears quickly.
  • If you prefer a slightly more cooked center, sear for an additional 30 seconds per side.
  • Serve this gourmet tuna with a side of steamed rice and a drizzle of low-sodium soy sauce or a light ponzu sauce.
