1 (15 ounce) can black beans, rinsed and drained
3 large eggs
1/2 cup unsweetened cocoa powder
1/2 cup melted coconut oil
1 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup chocolate chips, divided
Instructions
Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
In a food processor, combine the rinsed and drained black beans and eggs. Process until smooth.
Add the cocoa powder, melted coconut oil, granulated sugar, vanilla extract, baking powder, and salt to the food processor. Process until well combined.
Stir in 3/4 cup of the chocolate chips.
Pour the batter into the prepared baking pan and spread evenly.
Sprinkle the remaining 1/4 cup of chocolate chips over the top.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
Let the brownies cool completely in the pan before cutting and serving.
Notes
For an even richer chocolate flavor, use dark chocolate chips.
You can add chopped nuts like walnuts or pecans for extra texture.
Ensure your black beans are well-rinsed to avoid any bean flavor in the brownies.
