  • 1 red bell pepper, chopped
  • 4 large eggs

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for the easiest cleanup.
  2. Toss the diced potatoes with olive oil, salt, and pepper directly on the baking sheet. Spread them into a single layer.
  3. Roast the potatoes for 15 minutes until they begin to soften.
