4 (5 ounce) tilapia fillets
1 pound fresh green beans, trimmed
2 tablespoons olive oil, divided
1/2 cup grated Parmesan cheese
1/4 cup Panko breadcrumbs
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lemon, cut into wedges
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Toss the trimmed green beans with 1 tablespoon of olive oil, salt, and pepper directly on the prepared baking sheet. Spread them into an even layer.
In a small bowl, combine the Parmesan cheese, Panko breadcrumbs, and garlic powder. Mix well.
Pat the tilapia fillets dry with paper towels. Brush the tops of the fillets lightly with the remaining 1 tablespoon of olive oil.
Press the Parmesan-Panko mixture firmly onto the top surface of each tilapia fillet to create a crust.
Place the crusted tilapia fillets on the baking sheet among the green beans, leaving a little space between the fish and the vegetables.
Bake for 12 to 15 minutes, or until the tilapia is opaque and flakes easily with a fork, and the green beans are tender-crisp.
Serve immediately with fresh lemon wedges for squeezing over the fish and beans.
Notes
For extra crispiness, you can briefly broil the fish for the last 1-2 minutes, watching closely to prevent burning the cheese.
If your green beans are very thick, blanch them in boiling water for 2 minutes before tossing them with oil to ensure they cook through at the same time as the fish.
