1.5 lb salmon fillets, skin on or off
1 lb fresh green beans, trimmed
2 tablespoons olive oil, divided
1/4 cup Dijon mustard
3 tablespoons honey
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, garlic powder, salt, and pepper to create the honey mustard sauce.
Place the trimmed green beans on one side of the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and toss to coat lightly. Spread them into a single layer.
Place the salmon fillets on the other side of the baking sheet, leaving a small space between the fish and the beans. Brush the remaining 1 tablespoon of olive oil over the salmon.
Spoon or brush half of the honey mustard sauce evenly over the tops of the salmon fillets.
Bake for 12 to 15 minutes. The exact time depends on the thickness of your salmon. The salmon should flake easily with a fork, and the green beans should be tender-crisp.
Remove the pan from the oven. Brush the remaining honey mustard sauce over the salmon and the green beans.
Serve immediately.
Notes
For thicker salmon fillets, you may need to increase the cooking time by a few minutes. Check the internal temperature; it should reach 145 degrees Fahrenheit.
If you prefer a less sweet glaze, reduce the honey by 1 teaspoon.
You can substitute asparagus for green beans, but reduce the cooking time slightly, as asparagus cooks faster.
