1.5 lbs Italian sausage (sweet or hot), cut into 2-inch pieces
3 large bell peppers (red, yellow, green), seeded and cut into 1-inch strips
1 large yellow onion, cut into thick wedges
3 tablespoons olive oil
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional: 1/2 teaspoon garlic powder
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large, rimmed baking sheet with parchment paper for easy cleanup.
In a large bowl, combine the sausage pieces, bell pepper strips, and onion wedges.
Drizzle the mixture with olive oil. Sprinkle with Italian seasoning, salt, black pepper, and garlic powder, if using. Toss everything together until the vegetables and sausage are evenly coated.
Spread the sausage and vegetable mixture onto the prepared baking sheet in a single layer. Do not overcrowd the pan; use two pans if necessary to allow for proper roasting and browning.
Roast for 20 to 25 minutes, stirring halfway through, until the sausage is cooked through and the vegetables are tender and slightly caramelized.
Remove from the oven and serve immediately.
Notes
For extra flavor, add 1 cup of small potato chunks (parboiled for 5 minutes first) or 1 cup of cherry tomatoes during the last 15 minutes of roasting.
Serve this meal directly over cooked rice, quinoa, or inside crusty Italian rolls for sandwiches.
If you prefer a spicier dish, use hot Italian sausage or add 1/4 teaspoon of red pepper flakes to the seasoning mix.
