Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 2 ears of corn, each cut into 4 pieces
  • 1 pound small red potatoes, quartered
  • 12 ounces smoked sausage, sliced
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons Old Bay seasoning
  • 1/2 cup chicken broth or water
  • Fresh parsley, chopped, for garnish (optional)
  • Lemon wedges, for serving (optional)

Instructions

  1. Preheat your grill to medium-high heat or prepare your campfire.
  2. Tear off four large pieces of heavy-duty aluminum foil.
  3. Divide the corn, potatoes, and sausage evenly among the foil pieces.
  4. In a small bowl, combine the melted butter and Old Bay seasoning.
  5. Drizzle the butter mixture over the contents of each foil packet.
  6. Pour 2 tablespoons of chicken broth or water into each packet.
  7. Fold the long sides of the foil up and over the ingredients, then fold the ends to create a sealed packet.
  8. Place the foil packets directly on the grill grates or on hot coals in your campfire.
  9. Cook for 15-20 minutes, flipping once halfway through, until the potatoes are tender and the shrimp are pink and cooked through.
  10. Carefully open the packets, as steam will escape.
  11. Garnish with fresh parsley and serve with lemon wedges, if desired.

Notes

  • For extra flavor, add minced garlic or sliced onions to the packets.
  • You can prepare these packets ahead of time and keep them refrigerated until ready to cook.
  • Adjust the amount of Old Bay seasoning to your taste.
