  • 2 cups cooked chicken, shredded or diced
  • ½ cup Buffalo sauce, plus more for drizzling
  • 1 tablespoon olive oil
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup crumbled blue cheese (optional)
  • ¼ cup chopped red onion (optional)
  • 2 tablespoons chopped fresh cilantro or parsley (for garnish)

Instructions

  1. Preheat your oven to 450°F (230°C) with a 10-inch cast iron skillet inside.
  2. In a medium bowl, toss the cooked chicken with ½ cup Buffalo sauce until coated.
  3. Carefully remove the hot skillet from the oven using oven mitts.
  4. Pour the olive oil into the hot skillet, swirling to coat the bottom.
  5. Carefully place the pizza dough into the hot skillet. Stretch it gently to fit the bottom and slightly up the sides.
  6. Spread half of the mozzarella cheese evenly over the dough.
  7. Distribute the Buffalo chicken mixture over the cheese.
  8. Top with the remaining mozzarella cheese and blue cheese, if using.
  9. Sprinkle with chopped red onion, if desired.
  10. Bake for 15-20 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.
  11. Carefully remove the pizza from the skillet. Let it cool for a few minutes before slicing.
