This one-pan Skillet Chipotle Chicken Tortilla Bake offers bold flavors and easy cleanup. It’s a speedy, spicy enchilada pie layered with smoky chipotle chicken, tortillas, corn, and cheese.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can corn, drained
  • 1 (10-ounce) can diced tomatoes with green chilies, undrained
  • 1 chipotle pepper in adobo sauce, minced (plus 1 tablespoon adobo sauce)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 (6-inch) corn tortillas, cut into 1-inch strips
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1/2 cup chopped fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and cook until browned, about 5-7 minutes. Remove chicken from skillet and set aside.
  2. Add onion to the skillet and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in black beans, corn, diced tomatoes with green chilies, minced chipotle pepper, adobo sauce, cumin, chili powder, salt, and pepper. Bring to a simmer.
  4. Return chicken to the skillet. Stir in tortilla strips.
  5. Sprinkle shredded cheese over the top of the chicken and tortilla mixture.
  6. Transfer the skillet to a preheated oven and bake at 375°F (190°C) for 15-20 minutes, or until cheese is melted and bubbly.
  7. Remove from oven and let stand for 5 minutes before serving. Garnish with fresh cilantro.

Notes

  • For extra spice, add another chipotle pepper or a pinch of cayenne.
  • You can use rotisserie chicken to save time. Shred 2 cups of cooked chicken and add it with the beans and corn.
  • If you do not have an oven-safe skillet, transfer the mixture to a baking dish before adding cheese and baking.
