  • 4 pounds yellow onions, thinly sliced
  • 4 tablespoons unsalted butter, cut into pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup dry sherry or dry white wine (optional)
  • 6 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 8 slices baguette, toasted
  • 8 ounces Gruyère cheese, shredded

Instructions

  1. Place the sliced onions, butter, salt, and pepper into the slow cooker.
  2. Cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the onions are deeply caramelized and soft. Stir halfway through the cooking time.
  3. Stir in the sherry or wine, if using, and cook for 10 more minutes.
  4. Add the beef broth, thyme sprigs, and bay leaf.
  5. Cook on low for an additional 1 hour.
  6. Remove and discard the thyme sprigs and bay leaf. Taste and adjust seasoning if needed.
  7. Ladle the soup into oven-safe bowls.
  8. Top each bowl with a slice of toasted baguette.
  9. Sprinkle the shredded Gruyère cheese generously over the bread.
  10. Place the bowls on a baking sheet and broil for 2 to 4 minutes, watching closely, until the cheese is melted and bubbly brown.

Notes

  • Thinly slicing the onions is key for even caramelization. A mandoline works well for this task.
  • Do not skip the slow cooking time; this is where the depth of flavor develops.
  • Gruyère cheese is traditional, but Swiss or Provolone cheese also work as substitutions.
  • If you do not have oven-safe bowls, you can melt the cheese on the bread separately under the broiler and then place the cheese toast on top of the soup.
