3 lb pork shoulder (Boston butt), trimmed
1 cup low-sodium soy sauce
1/2 cup honey
1/4 cup apple cider vinegar
1/4 cup packed brown sugar
1/4 cup ketchup
6 cloves garlic, minced
1 teaspoon ground ginger
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Instructions
Place the pork shoulder into the basin of your slow cooker.
In a medium bowl, whisk together the soy sauce, honey, apple cider vinegar, brown sugar, ketchup, minced garlic, ginger, black pepper, and red pepper flakes.
Pour the sauce mixture evenly over the pork shoulder in the slow cooker.
Cover the slow cooker and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours, until the pork is very tender.
Remove the pork from the slow cooker and place it on a cutting board or large plate.
Shred the pork using two forks. Skim any excess fat from the liquid remaining in the slow cooker.
Return the shredded pork to the slow cooker and toss it well with the sauce. Let it sit on the WARM setting for 15 minutes before serving.
Notes
For thicker sauce, remove about 1 cup of the cooking liquid and simmer it on the stovetop until reduced by half, then pour it back over the shredded pork.
Serve this pulled pork on hamburger buns with a side of coleslaw.
