4 lb pork shoulder (Boston butt), trimmed of excess fat
1 cup apple cider vinegar
1/2 cup water
1/4 cup Worcestershire sauce
2 tablespoons brown sugar
1 tablespoon smoked paprika
1 tablespoon kosher salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 cup your favorite BBQ sauce (for serving)
Instructions
Place the pork shoulder in the bottom of your slow cooker.
In a separate bowl, whisk together the apple cider vinegar, water, Worcestershire sauce, brown sugar, smoked paprika, salt, pepper, garlic powder, and onion powder to create the cooking liquid.
Pour the liquid over the pork shoulder in the slow cooker.
Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the pork is very tender.
Remove the pork from the slow cooker and place it on a large cutting board. Discard the cooking liquid.
Use two forks to shred the pork completely.
Return the shredded pork to the slow cooker. Stir in about 1/2 cup of your favorite BBQ sauce.
Cook on the keep warm setting for 15 minutes to allow the meat to absorb the sauce.
Serve hot on buns with extra BBQ sauce.
Notes
For best results, use a pork shoulder with some fat cap remaining; the fat adds moisture during the long cook time.
If you prefer a thicker sauce, drain most of the cooking liquid before adding the BBQ sauce back in.
This pulled pork freezes well. Cool completely, then store in airtight containers for up to 3 months.
