Create a rich and deeply satisfying Smoked Gouda Mac and Cheese. This recipe brings a smoky depth to the classic comfort food, making your next meal truly special.

Ingredients

Scale
  • 1 pound elbow macaroni
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk, warmed
  • 8 ounces smoked Gouda cheese, shredded
  • 4 ounces sharp cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg
  • 1/2 cup panko breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Cook the macaroni according to package directions until al dente. Drain well and set aside.
  3. In a large saucepan over medium heat, melt the butter. Whisk in the flour and cook for one minute, stirring constantly. This creates your roux.
  4. Gradually whisk in the warm milk until the mixture is smooth. Continue cooking, stirring often, until the sauce thickens enough to coat the back of a spoon, about 5 to 7 minutes. Do not let it boil rapidly.
  5. Remove the saucepan from the heat. Stir in the shredded smoked Gouda and cheddar cheese until completely melted and the sauce is smooth.
  6. Season the cheese sauce with salt, pepper, and nutmeg. Taste and adjust seasoning if needed.
  7. Fold the drained cooked macaroni into the cheese sauce until every piece is coated.
  8. Pour the mixture into the prepared baking dish.
  9. If using, sprinkle the panko breadcrumbs evenly over the top.
  10. Bake for 20 to 25 minutes, or until the top is golden brown and the sauce is bubbly around the edges.
  11. Let it rest for 5 minutes before serving. Enjoy your elevated comfort food!

Notes

  • Shred your own cheese from a block; pre-shredded cheese contains additives that prevent smooth melting.
  • Warming the milk before adding it to the roux helps prevent lumps in your sauce.
  • Feel free to add a dash of smoked paprika for extra depth if you wish.
