  • 1 large yellow onion, chopped
  • 1 red bell pepper, chopped

  • 1 pound ground turkey or beef (optional for vegetarian)
  • 1 (15 ounce) can pumpkin puree (not pumpkin pie filling)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 cup vegetable or chicken broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1-2 chipotle peppers in adobo sauce, minced (adjust to your spice preference)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and bell pepper. Cook until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. If using meat, add the ground turkey or beef. Cook, breaking it up, until browned. Drain any excess fat.
  5. Pour in the pumpkin puree, diced tomatoes, black beans, kidney beans, and broth. Stir well to combine.
  6. Add the chili powder, cumin, smoked paprika, minced chipotle peppers, salt, and pepper. Mix everything thoroughly.
  7. Bring the chili to a simmer. Reduce the heat to low, cover, and let it cook for at least 30 minutes, stirring occasionally. This allows the flavors to blend.
  8. Taste and adjust seasonings as needed before serving hot.

  • For an extra creamy texture, stir in 1/4 cup of heavy cream or coconut milk during the last 5 minutes of cooking.
