Enjoy a giant, gooey chocolate chip cookie baked in a skillet, complete with graham cracker crust and toasted marshmallows. It’s like a campfire s’mores experience, right in your own kitchen!

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1/2 cup graham cracker crumbs

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 10-inch cast-iron skillet.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the chocolate chips.
  7. Press the cookie dough evenly into the prepared skillet.
  8. Sprinkle the graham cracker crumbs over the dough.
  9. Top with the mini marshmallows.
  10. Bake for 25-30 minutes, or until the edges are golden brown and the marshmallows are toasted.
  11. Let cool for at least 10 minutes before serving directly from the skillet.

Notes

  • For an extra gooey center, underbake slightly.
  • You can use a mix of chocolate chip types (milk, dark, white).
  • Toast the marshmallows under the broiler for a few minutes if they don’t brown enough in the oven.
