All-purpose flour: 2 1/4 cups
Unsalted butter, softened: 1 cup (2 sticks)
Powdered sugar: 1 cup, plus more for rolling
Vanilla extract: 1 teaspoon
Salt: 1/4 teaspoon
Finely chopped pecans or walnuts (optional): 1/2 cup
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and 1 cup of powdered sugar until the mixture is light and fluffy.
Beat in the vanilla extract and salt. Mix well.
If using, stir in the chopped nuts.
Gradually add the flour, mixing on low speed until just combined. Do not overmix the dough.
Roll the dough into small, uniform balls, about 1 inch in diameter. Place them 2 inches apart on the prepared baking sheets.
Bake for 10 to 12 minutes, or until the edges are just barely starting to turn light golden. The tops should still look pale.
Let the cookies cool on the baking sheets for 5 minutes before carefully transferring them to a wire rack to cool completely.
Once completely cool, generously roll each cookie in powdered sugar until fully coated. For the best melt-in-your-mouth effect, you can roll them a second time after the first coating has set slightly.
Notes
For the softest texture, use room temperature butter.
Do not skip the cooling time before rolling in sugar; warm cookies will absorb the sugar instead of coating evenly.
Store these cookies in an airtight container at room temperature.
