Instructions

  1. Combine warm water, yeast, and sugar in a large bowl. Let sit for 5 minutes until foamy.
  2. Add flour, salt, and melted butter to the yeast mixture. Mix until a shaggy dough forms.
  3. Knead the dough on a lightly floured surface for 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  5. Preheat oven to 450°F (232°C). Line two baking sheets with parchment paper.
  6. Bring 10 cups of water and baking soda to a rolling boil in a large pot.
  7. Divide the risen dough into 6 equal pieces. Roll each piece into a long rope, about ½ inch thick.
  8. Cut each rope into 1-inch pieces.
  9. Carefully drop pretzel bites, a few at a time, into the boiling water for 30 seconds. Do not overcrowd the pot.
  10. Remove with a slotted spoon and place on the prepared baking sheets.
  11. Brush the pretzel bites with the beaten egg and sprinkle generously with coarse sea salt.
  12. Bake for 12-15 minutes, or until golden brown.
  13. While pretzels bake, melt 2 tablespoons butter in a saucepan over medium heat.
  14. Whisk in 2 tablespoons flour and cook for 1 minute, stirring constantly, to form a roux.
  15. Gradually whisk in milk until smooth. Cook, stirring, until the sauce thickens slightly.
  16. Reduce heat to low. Stir in shredded cheddar cheese until melted and smooth.
  17. Whisk in beer, Dijon mustard, and Worcestershire sauce. Cook for 2-3 minutes, stirring, until heated through.
  18. Season with salt and black pepper to taste.
  19. Serve warm pretzel bites with the beer cheese dip.
