Enjoy these fluffy Sourdough Berry Protein Pancakes. We use our active sourdough starter for a slight tang and extra texture, boosted with protein for a satisfying start to your day. Hannah loves how simple these are to whip up!

Ingredients

  • 1 cup active sourdough discard starter
  • 1/2 cup milk (dairy or non-dairy)
  • 1 large egg
  • 1 scoop vanilla or unflavored protein powder
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon maple syrup (optional)
  • 1/2 cup fresh mixed berries (blueberries, raspberries)
  • Butter or oil for the griddle

Instructions

  1. In a medium bowl, whisk together the sourdough discard, milk, and egg until smooth.
  2. In a separate small bowl, combine the protein powder, flour, baking powder, and salt.
  3. Add the dry ingredients to the wet ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine. Stir in maple syrup if using.
  4. Gently fold in the fresh berries.
  5. Heat a lightly oiled griddle or non-stick pan over medium heat.
  6. Pour 1/4 cup of batter per pancake onto the hot griddle.
  7. Cook for 2-3 minutes per side, until golden brown and bubbles appear on the surface. Flip carefully.
  8. Serve immediately with your favorite toppings.

Notes

  • Make sure your sourdough starter is active (fed within the last 12 hours) for the best rise.
  • If the batter seems too thick, add milk one teaspoon at a time until you reach a pourable consistency.
  • For a sweeter pancake, you can dust the berries in a little extra flour before folding them in to prevent sinking.
