  • 1 medium spaghetti squash (about 2-3 pounds)
  • 1 pound lean ground turkey or beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (24 ounce) jar marinara sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 15 ounces ricotta cheese
  • 1 large egg, beaten
  • 1/4 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place cut-side down on a baking sheet and roast for 40-50 minutes, or until tender.
  3. While the squash is roasting, cook the ground meat in a large skillet over medium heat until browned. Drain off any excess fat.
  4. Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  5. Stir in the marinara sauce, basil, oregano, salt, and pepper. Bring to a simmer and cook for 10 minutes.
  6. Once the spaghetti squash is cool enough to handle, use a fork to scrape out the strands.
  7. In a medium bowl, combine the ricotta cheese, beaten egg, and Parmesan cheese.
  8. Spread half of the marinara meat sauce in the bottom of a 9×13 inch baking dish.
  9. Layer half of the spaghetti squash strands over the sauce.
  10. Dollop half of the ricotta mixture over the spaghetti squash.
  11. Sprinkle with 1 cup of mozzarella cheese.
  12. Repeat the layers: remaining marinara meat sauce, remaining spaghetti squash, remaining ricotta mixture, and the remaining 1 cup of mozzarella cheese.
  13. Bake for 20-25 minutes, or until bubbly and the cheese is melted and golden brown.
  14. Let stand for 5-10 minutes before serving.

  • You can use your favorite marinara sauce.
  • For a vegetarian option, omit the meat and add sautéed mushrooms and zucchini to the sauce.
  • Ensure the spaghetti squash is cooked until fork-tender for easy strand removal.
