1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/2 cup (1 stick) unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup reduced apple cider (or thick apple cider concentrate)
1/4 cup buttermilk
1/2 cup granulated sugar (for topping)
1 tablespoon ground cinnamon (for topping)
Instructions
Preheat your oven to 350 degrees Fahrenheit. Grease and flour a standard 9×5 inch loaf pan.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and allspice. Set aside.
In a large bowl, cream the softened butter and 1 cup of sugar together until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate small bowl, mix the reduced apple cider and buttermilk.
Gradually add the dry ingredients to the wet ingredients, alternating with the cider mixture, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
Pour the batter into the prepared loaf pan.
In a small bowl, mix the 1/2 cup sugar and 1 tablespoon cinnamon for the topping. Sprinkle this mixture evenly over the top of the batter.
Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the loaf cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.
Notes
To reduce apple cider, simmer 1 cup of cider in a small saucepan over medium heat until it reduces to about 1/2 cup of thick liquid. Let it cool before using.
For an extra donut flavor, you can brush the warm loaf with melted butter after baking and then sprinkle with more cinnamon sugar.
This loaf tastes best when served at room temperature.
