  • 1 cup granulated sugar
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/4 cup light corn syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • Pinch of cayenne pepper (optional)
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup mini chocolate chips
  • Flaky sea salt for sprinkling

Instructions

  1. Wash and thinly slice the apples. Arrange the slices on a large serving platter or baking sheet.
  2. In a medium saucepan, combine the sugar, heavy cream, butter, and corn syrup.
  3. Heat the mixture over medium heat, stirring constantly until the sugar dissolves.
  4. Stop stirring once it boils. Let the mixture cook for 5 to 7 minutes, until it reaches a light amber color. Watch carefully to prevent burning.
  5. Remove the saucepan from the heat. Carefully whisk in the cinnamon, ginger, nutmeg, and cayenne pepper, if using. The mixture will bubble.
  6. Let the spiced caramel cool for about 5 minutes so it thickens slightly.
  7. Drizzle the warm spiced caramel generously over the apple slices.
  8. Sprinkle the chopped nuts and mini chocolate chips evenly over the caramel.
  9. Finish with a light sprinkle of flaky sea salt. Serve immediately.

  • For extra dipping fun, serve the apples on a board and keep the caramel warm in a small bowl on the side.
