  • 100g Aged Egg Whites
  • 100g Granulated Sugar
  • 100g Almond Flour, finely ground
  • 100g Powdered Sugar
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Ground Cinnamon
  • Pinch of Ground Nutmeg
  • Pinch of Ground Cloves
  • 1/4 tsp Salt
  • 1-2 drops Brown Food Coloring (optional)
  • 100g White Chocolate
  • 50ml Heavy Cream
  • 1 tsp Instant Espresso Powder
  • 1/2 tsp Vanilla Extract

Instructions

  1. Prepare the meringue by whipping the egg whites until foamy. Gradually add the granulated sugar until stiff, glossy peaks form.
  2. Sift together the almond flour, powdered sugar, ginger, cinnamon, nutmeg, cloves, and salt. Gently fold the dry ingredients into the meringue in three additions.
  3. If using, fold in the brown food coloring until just combined.
  4. Pipe the batter onto parchment-lined baking sheets into small circles. Tap the trays firmly to release air bubbles.
  5. Let the macarons rest at room temperature until a skin forms (about 30-60 minutes).
  6. Bake in a preheated oven at 300°F (150°C) for 12-15 minutes, until the feet develop. Cool completely on the tray.
  7. Make the filling: Heat the heavy cream until just simmering. Dissolve the espresso powder in the hot cream.
  8. Chop the white chocolate and place it in a bowl. Pour the hot cream mixture over the chocolate. Let it sit for one minute, then stir until smooth. Add the vanilla extract.
  9. Allow the ganache to cool and thicken to a pipeable consistency.
  10. Pair the cooled macaron shells and pipe the latte ganache filling onto one shell before topping with another.

  • You must age your egg whites by separating them a day ahead and letting them sit covered in the fridge.
  • Use a kitchen scale for precise ingredient measurements; baking is chemistry.
  • Let the finished macarons mature in the refrigerator for 24 hours for the best texture.
