Whip up these Spiced Gingerbread Truffles for a delightful, warm treat. They capture the essence of holiday baking in a simple, rich chocolate bite.

Ingredients

  • 8 ounces bittersweet chocolate, chopped
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter, cut into pieces
  • 1/4 cup powdered sugar, plus more for dusting
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

Instructions

  1. Place the chopped chocolate in a medium heatproof bowl.
  2. In a small saucepan, heat the heavy cream and butter over medium heat until it just begins to simmer around the edges. Do not boil.
  3. Pour the hot cream mixture over the chocolate. Let it sit undisturbed for 5 minutes.
  4. Whisk the mixture gently starting from the center until smooth and glossy. This is your ganache.
  5. Whisk in the powdered sugar, ginger, cinnamon, cloves, nutmeg, and salt until fully combined.
  6. Cover the bowl and chill the ganache in the refrigerator for at least 2 hours, or until firm enough to scoop.
  7. Line a baking sheet with parchment paper.
  8. Use a small spoon or cookie scoop to portion out the chilled ganache. Roll quickly between your palms into small balls.
  9. Roll the truffles in extra powdered sugar until coated.
  10. Store the finished truffles in an airtight container in the refrigerator.

Notes

  • If the ganache gets too hard to roll, let it sit at room temperature for 10 minutes.
  • You can substitute milk chocolate for bittersweet chocolate, but reduce the added powdered sugar slightly.
  • For an extra kick, add a tiny drop of molasses to the warm cream mixture.
