  • 1 large sweet potato, thinly sliced
  • 1 box lasagna noodles
  • 15 oz ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 egg
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 (15 oz) can tomato sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Cook lasagna noodles according to package directions until al dente. Drain and set aside.
  3. In a bowl, mix the ricotta cheese, mozzarella cheese (reserving 1/4 cup for topping), Parmesan cheese, egg, parsley, cinnamon, nutmeg, and cloves. Season with salt and pepper. This is your spiced cheese mixture.
  4. In a small bowl, mix the tomato sauce with a pinch of salt and pepper.
  5. Spread a thin layer of tomato sauce in the bottom of the prepared baking dish.
  6. Arrange a layer of cooked lasagna noodles over the sauce.
  7. Spread half of the spiced cheese mixture evenly over the noodles.
  8. Arrange half of the thinly sliced sweet potatoes over the cheese layer. Drizzle lightly with olive oil.
  9. Spoon half of the remaining tomato sauce over the sweet potatoes.
  10. Repeat the layers: noodles, the remaining cheese mixture, the remaining sweet potatoes, and the rest of the tomato sauce.
  11. Top with the reserved 1/4 cup of mozzarella cheese.
  12. Bake for 35-40 minutes, or until the cheese is bubbly and the edges are lightly browned.
  13. Let the lasagna rest for 10 minutes before slicing and serving.

Notes

  • You can roast the sweet potato slices slightly before layering if you prefer them very soft.
  • Adjust the spices to match your preferred level of warmth.
  • This lasagna tastes even better the next day.
