  • 1 pound large shrimp, peeled and deveined
  • 1 pound fettuccine pasta
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1 teaspoon Cajun seasoning (adjust to your spice preference)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the fettuccine according to package directions until al dente. Reserve about 1 cup of the pasta water before draining.
  2. While the pasta cooks, season the shrimp lightly with salt and pepper.
  3. Heat the olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove the shrimp from the skillet and set aside.
  4. Reduce the heat to low. Add the butter to the same skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant. Do not let the garlic brown.
  5. Pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer, stirring constantly.
  6. Stir in the Cajun seasoning. Let the sauce simmer gently for 3-4 minutes until it thickens slightly.
  7. Remove the skillet from the heat. Whisk in the grated Parmesan cheese until the sauce is smooth. If the sauce is too thick, add a splash of the reserved pasta water until you reach your desired consistency.
  8. Add the cooked, drained pasta and the cooked shrimp to the skillet. Toss everything gently to coat well with the sauce.
  9. Serve immediately, garnished with fresh parsley and extra Parmesan cheese.

  • Adjust the amount of Cajun seasoning for more or less heat.
  • For richer flavor, substitute half of the chicken broth with dry white wine.
