Create an easy yet gourmet appetizer or brunch item. This recipe features earthy mushrooms perfectly sautéed with fresh garlic and a hint of chili for a pleasant kick, served on toasted bread.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound mixed mushrooms (cremini, shiitake), sliced
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to your spice preference)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 4 thick slices rustic bread (sourdough or country loaf)
  • 1 tablespoon butter (optional, for toasting)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the sliced mushrooms to the hot skillet. Cook without stirring for 3 minutes to allow them to brown slightly.
  3. Stir the mushrooms and continue cooking until they release their moisture and begin to brown further, about 5-7 minutes total.
  4. Add the minced garlic and red pepper flakes to the skillet. Cook for 1 minute until fragrant. Be careful not to burn the garlic.
  5. Season with salt and pepper. Stir in the chopped parsley. Remove from heat.
  6. Toast the bread slices. You can do this in a toaster, under the broiler, or by lightly spreading butter on one side and pan-frying until golden brown.
  7. Spoon the warm spicy garlic mushrooms evenly over the toasted bread slices.
  8. Serve immediately and enjoy your elevated snack.

Notes

  • Use a variety of mushrooms for deeper flavor complexity.
  • Adjust the red pepper flakes based on how much heat you enjoy. We like a moderate warmth.
  • For extra richness, rub the toasted bread lightly with a raw garlic clove before topping.
