Ingredients

  • Chicken Wings (flats and drumettes): 2 lbs
  • Honey: 1/4 cup
  • Lime Juice (freshly squeezed): 3 tablespoons
  • Soy Sauce: 2 tablespoons
  • Sriracha or other hot sauce: 1-2 tablespoons (adjust to heat preference)
  • Garlic Powder: 1 teaspoon
  • Onion Powder: 1/2 teaspoon
  • Salt: 1/2 teaspoon
  • Black Pepper: 1/4 teaspoon
  • Cornstarch (optional, for crispier skin): 1 tablespoon
  • Lime Zest: 1 teaspoon (for garnish)
  • Fresh Cilantro (chopped, for garnish): 1 tablespoon

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil, and place a wire rack on top.
  2. Pat the chicken wings very dry using paper towels. This step helps achieve crispier skin.
  3. In a large bowl, toss the dried wings with salt, pepper, and cornstarch if you are using it.
  4. Place the seasoned wings on the prepared wire rack in a single layer. Do not overcrowd the pan.
  5. Bake the wings for 25 minutes.
  6. While the wings bake, prepare the glaze. In a small saucepan, combine the honey, lime juice, soy sauce, Sriracha, garlic powder, and onion powder.
  7. Heat the sauce mixture over medium heat, stirring until it simmers and thickens slightly, about 3-5 minutes. Remove from heat.
  8. After the initial 25 minutes of baking, remove the wings from the oven.
  9. Brush or toss the baked wings generously with about half of the honey lime sauce.
  10. Return the sauced wings to the oven and bake for another 15-20 minutes, or until the internal temperature reaches 165°F (74°C) and the sauce is caramelized.
  11. Remove the wings from the oven. Toss them immediately with the remaining sauce.
  12. Garnish with fresh lime zest and chopped cilantro before serving hot.
