1 pound ground beef
2 cloves garlic, minced
1 teaspoon ginger, grated
1/4 cup soy sauce
2 tablespoons brown sugar
2 tablespoons gochujang (Korean chili paste)
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 teaspoon cornstarch
1/4 cup water
Cooked white or brown rice, for serving
Green onions, sliced, for garnish
Sesame seeds, for garnish
Instructions
In a medium bowl, whisk together the soy sauce, brown sugar, gochujang, sesame oil, rice vinegar, cornstarch, and water to create the sauce. Set aside.
Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart, until browned. Drain any excess fat.
Add the minced garlic and grated ginger to the skillet with the beef. Cook for 1 minute until fragrant.
Pour the prepared sauce over the beef mixture. Stir well to coat everything evenly.
Bring the mixture to a simmer. Cook for 3 to 5 minutes, stirring occasionally, until the sauce thickens slightly and coats the beef.
Divide the cooked rice among serving bowls. Spoon the spicy Korean beef mixture over the rice.
Garnish generously with sliced green onions and sesame seeds before serving immediately.
Notes
You can substitute ground turkey or thinly sliced sirloin for the ground beef if you prefer.
Adjust the amount of gochujang to control the spice level to your taste.
For extra flavor, add a splash of mirin to the sauce mixture.
