Ingredients

  • Chicken breast: 1.5 lbs, cut into 1-inch pieces
  • Mango: 2 large, ripe, diced
  • Red onion: 1/2 cup, thinly sliced
  • Bell pepper (red or yellow): 1, sliced
  • Lime juice: 1/4 cup
  • Honey or maple syrup: 2 tablespoons
  • Soy sauce or tamari: 2 tablespoons
  • Sriracha or chili garlic sauce: 1-2 teaspoons (adjust to taste)
  • Garlic: 2 cloves, minced
  • Ginger: 1 teaspoon, grated
  • Olive oil: 1 tablespoon
  • Cooked rice or quinoa: For serving
  • Cilantro: For garnish

Instructions

  1. In a bowl, whisk together the lime juice, honey, soy sauce, sriracha, garlic, and ginger. This is your marinade.
  2. Add the chicken pieces to the marinade. Toss to coat completely. Let it marinate for at least 20 minutes, or up to 4 hours in the refrigerator.
  3. Heat the olive oil in a large skillet or wok over medium-high heat.
  4. Add the marinated chicken to the hot skillet. Cook for 5-7 minutes, turning occasionally, until the chicken is cooked through and slightly caramelized. Remove the chicken from the skillet and set aside.
  5. Add the sliced red onion and bell pepper to the same skillet. Sauté for 3-4 minutes until they soften slightly but still have a bite.
  6. Return the cooked chicken to the skillet with the vegetables.
  7. Gently fold in the diced mango. Cook for just 1 minute to warm the mango through, being careful not to let it break down completely.
  8. Serve the spicy mango chicken mixture over your choice of cooked rice or quinoa.
  9. Garnish generously with fresh cilantro before serving.

Notes

  • For extra flavor, you can grill the chicken instead of pan-frying.
  • If you prefer a thicker sauce, let the mixture simmer for an extra minute or two after adding the mango.
  • Use firm mangoes if you do not want them to become too soft during cooking.
