A recipe for fresh, sweet, and spicy salsa featuring ripe mango, red onion, cilantro, lime juice, and jalapeño.

Ingredients

Scale
  • 2 ripe mangoes, diced
  • 1/2 red onion, finely diced
  • 1 jalapeño pepper, seeded and minced (use more or less depending on heat preference)
  • 1/2 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare all vegetables and fruit: dice the mangoes, finely dice the red onion, mince the jalapeño, and chop the cilantro.
  2. In a medium bowl, combine the diced mango, red onion, minced jalapeño, and chopped cilantro.
  3. Pour the lime juice over the mixture.
  4. Add the salt and pepper.
  5. Gently stir all ingredients together until they are evenly mixed.
  6. Cover the bowl and let the salsa rest in the refrigerator for at least 15 minutes before serving. This allows the flavors to combine.
  7. Taste the salsa before serving and adjust salt or lime juice as needed.

Notes

  • For a milder salsa, remove all seeds and white membranes from the jalapeño. For hotter salsa, leave some seeds in or substitute with a habanero pepper.
  • This salsa pairs well with tortilla chips, grilled fish, chicken, or pork tacos.
  • Store leftover salsa in an airtight container in the refrigerator for up to 3 days.
