4 bone-in pork chops (about 1 inch thick)
1 tablespoon olive oil
Salt and freshly ground black pepper to taste
1/4 cup honey
2 tablespoons Sriracha sauce (adjust for your heat preference)
1 tablespoon soy sauce
1 clove garlic, minced
1 teaspoon apple cider vinegar
Instructions
Pat the pork chops completely dry with paper towels. Season both sides generously with salt and pepper.
Heat olive oil in a large skillet over medium-high heat until shimmering.
Sear the pork chops for 3-4 minutes per side until golden brown. You may need to work in batches. Remove chops from the skillet and set aside.
Reduce the heat to medium-low. In the same skillet, whisk together the honey, Sriracha, soy sauce, minced garlic, and apple cider vinegar.
Bring the sauce to a gentle simmer. Cook for 1-2 minutes, stirring constantly, until the sauce thickens slightly.
Return the pork chops to the skillet. Spoon the glaze over the chops.
Continue cooking for another 3-5 minutes, turning occasionally, until the pork reaches an internal temperature of 145°F and the glaze is sticky and caramelized.
Remove from heat and let the pork chops rest for 5 minutes before serving immediately with extra glaze spooned over the top.
Notes
Use a meat thermometer to check for doneness; resting time is important for juicy results.
If your honey is very thick, warm it slightly before mixing the sauce.
For a less spicy glaze, start with 1 tablespoon of Sriracha and taste before adding more.
