A quick and flavorful chili featuring ground turkey and white beans, prepared on the stovetop with adjustable heat levels.

  • 1 tablespoon olive oil
  • 1 pound ground turkey (93% lean or higher)
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (or more for extra heat)
  • 1 (15 ounce) can diced green chilies, undrained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth (low sodium)
  • 2 (15 ounce) cans white beans (cannellini or Great Northern), rinsed and drained
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, avocado slices

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add the chopped onion and bell pepper to the pot. Cook until softened, about 5 minutes.
  4. Stir in the minced garlic, chili powder, cumin, oregano, smoked paprika, and cayenne pepper. Cook for 1 minute until fragrant.
  5. Pour in the diced green chilies, diced tomatoes (with their liquid), and chicken broth. Bring the mixture to a simmer.
  6. Add the rinsed and drained white beans. Stir well.
  7. Reduce the heat to low, cover partially, and let the chili simmer for at least 20 minutes, stirring occasionally, to allow the flavors to combine.
  8. Taste the chili and season with salt and pepper as needed. Add more cayenne pepper if you want more heat.
  9. Serve hot with your choice of toppings.

Notes

  • For a thicker chili, remove about 1 cup of the beans, mash them, and stir them back into the pot during the last 10 minutes of simmering.
  • If you prefer a milder chili, start with just a pinch of cayenne pepper or omit it entirely.
  • This recipe works well in a slow cooker; cook on low for 6-8 hours or high for 3-4 hours after browning the turkey and sautéing the vegetables.
