12 large white or cremini mushrooms
1 tablespoon olive oil
1 small shallot, minced
2 cloves garlic, minced
5 ounces fresh spinach, chopped
4 ounces feta cheese, crumbled
1/4 cup plain breadcrumbs
1 large egg, lightly beaten
1/4 teaspoon black pepper
Pinch of salt
Instructions
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a baking sheet.
Gently remove the stems from the mushrooms. Finely chop the stems and set them aside. Wipe the mushroom caps clean.
Heat the olive oil in a skillet over medium heat. Add the minced shallot and chopped mushroom stems. Cook until softened, about 3 minutes.
Add the minced garlic and chopped spinach to the skillet. Cook until the spinach wilts completely and any liquid evaporates, about 4 minutes. Remove from heat and let the mixture cool slightly.
In a medium bowl, combine the cooled spinach mixture, crumbled feta cheese, breadcrumbs, beaten egg, black pepper, and salt. Mix until everything is well combined.
Arrange the mushroom caps cavity-side up on the prepared baking sheet.
Spoon the spinach and feta filling evenly into each mushroom cap, mounding it slightly.
Bake for 18 to 20 minutes, or until the mushrooms are tender and the filling is lightly golden brown.
Serve warm.
Notes
Use cremini mushrooms for a stronger flavor than white button mushrooms.
If you prefer a crispier topping, lightly sprinkle the tops of the filled mushrooms with a small amount of extra breadcrumbs before baking.
Wipe the mushrooms clean with a damp cloth instead of washing them to prevent them from absorbing excess water.
