  • 1 loaf (about 1 pound) pre-made white bread or French loaf
  • 1 cup frozen chopped spinach, thawed and squeezed dry
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup melted butter

Instructions

  1. Preheat your oven to 350 degrees F. Line a loaf pan or baking dish with foil.
  2. Cut the loaf of bread into 1-inch cubes, keeping the bottom crust intact if possible to hold the shape. Do not cut all the way through.
  3. In a medium bowl, mix the softened cream cheese, mayonnaise, sour cream, 1/2 cup of the mozzarella cheese, Parmesan cheese, minced garlic, salt, and pepper until smooth.
  4. Gently fold in the dried spinach and chopped artichoke hearts.
  5. Carefully pull apart the bread cubes slightly and spoon the cheese mixture evenly over and between the pieces. Try to get the filling into all the crevices.
  6. Sprinkle the remaining 1/2 cup of mozzarella cheese over the top.
  7. Drizzle the melted butter evenly over the entire loaf.
  8. Wrap the loaf loosely in the prepared foil. Bake for 20 minutes.
  9. Remove the foil and bake for another 5 to 10 minutes, or until the cheese is melted, bubbly, and lightly browned.
  10. Let it cool for just a few minutes before serving warm. Enjoy pulling it apart!

Notes

  • Make sure your spinach is very dry; excess water will make the dip runny.
  • You can use a pre-sliced loaf of Italian bread for quicker preparation.
  • If you like a tangier flavor, substitute 2 tablespoons of the sour cream with plain Greek yogurt.
