A simple recipe for assembling a fresh spring mix salad featuring strawberries, goat cheese, and a light vinaigrette.

Ingredients

Scale
  • 6 cups spring mix greens
  • 1 cup fresh strawberries, sliced
  • 4 ounces goat cheese, crumbled
  • 1/2 cup pecans, toasted
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup balsamic vinaigrette dressing

Instructions

  1. Wash and thoroughly dry the spring mix greens. Place the dried greens in a large bowl.
  2. Add the sliced strawberries, crumbled goat cheese, toasted pecans, and thinly sliced red onion to the bowl with the greens.
  3. Drizzle the balsamic vinaigrette dressing over the salad ingredients.
  4. Gently toss the salad until all ingredients are lightly coated with the dressing.
  5. Serve immediately for the best texture.

Notes

  • For the best dressing, use a simple balsamic vinaigrette or a poppy seed dressing.
  • To keep the spring mix fresh, wash and dry it completely, then store it in a container lined with a paper towel in the refrigerator before assembly.
  • Toast pecans in a dry skillet over medium heat for 3 to 5 minutes, stirring often, until fragrant.
