A recipe for rich, fudgy brownies featuring a bright strawberry swirl and topped with a simple chocolate ganache.

  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

  • 1/4 teaspoon baking powder
  • 1 cup fresh strawberries, chopped
  • 1/2 cup white chocolate chips (optional)

  • For the Ganache: 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal. Lightly grease the paper.
  2. In a large bowl, whisk the melted butter and sugar together until combined.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix.
  6. Pour half of the batter into the prepared pan and spread evenly.
  7. Scatter the chopped strawberries and white chocolate chips (if using) over the batter.
  8. Gently spoon the remaining batter over the strawberry layer. Use a knife or skewer to gently swirl the layers together for a marbled effect.
  9. Bake for 28 to 32 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter, for a fudgy texture.
  10. Let the brownies cool completely in the pan on a wire rack.
  11. Prepare the ganache: Place the chocolate chips in a small, heatproof bowl. Heat the heavy cream in a small saucepan until it just begins to simmer. Pour the hot cream over the chocolate chips. Let it sit for 5 minutes, then whisk until smooth.
  12. Pour or drizzle the ganache over the cooled brownies. Let the ganache set before cutting into squares.

Notes

  • For a chewier brownie, reduce the baking time by 2 minutes. For a cakey texture, add 1/4 teaspoon more baking powder.
  • If you use frozen strawberries, thaw them slightly and gently pat them dry with paper towels before adding them to the batter to prevent excess moisture.
  • You can substitute fresh strawberries with 1/2 cup of strawberry jam swirled into the batter instead of fresh fruit.
