1 cup granulated sugar
1 and 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 cup champagne (plus more for reducing)
1/4 cup strawberry puree
1/2 cup powdered sugar
1/4 cup heavy cream
1/4 cup fresh strawberries, chopped
Instructions
Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Add the softened butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
In a separate small bowl, whisk together the eggs, vanilla extract, 1/2 cup champagne, and strawberry puree.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.
Fill each cupcake liner about two-thirds full with batter.
Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
While the cupcakes cool, prepare the frosting. In a small saucepan, gently heat about 1/4 cup of champagne over medium heat until it has reduced by half. Let it cool.
In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar, alternating with the cooled champagne reduction and heavy cream, until the frosting is smooth and spreadable.
Stir in the chopped fresh strawberries.
Frost the cooled cupcakes and garnish with a fresh strawberry if desired.
Notes
For an alcohol-free version, substitute the champagne with sparkling white grape juice.
Ensure your butter and eggs are at room temperature for best results.
Do not overmix the batter; this can lead to tough cupcakes.
