1 package (14.1 ounces) refrigerated pie crusts or puff pastry sheets
8 ounces cream cheese, softened
1/2 cup granulated sugar
1 large egg yolk
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup sliced fresh strawberries
1 large egg, beaten (for egg wash)
1/2 cup powdered sugar
2 tablespoons milk
Instructions
If using pie crusts, let them sit at room temperature for 15 minutes. If using puff pastry, follow package directions for thawing.
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line two baking sheets with parchment paper.
In a medium bowl, beat the softened cream cheese, granulated sugar, egg yolk, vanilla extract, and salt until the mixture is smooth and creamy. Set aside.
Unroll the pastry dough onto a lightly floured surface. Cut each sheet into 6 equal squares (12 squares total).
Place one square on the prepared baking sheet. Using a knife, lightly score a border about 1/2 inch from the edge, being careful not to cut all the way through the dough. This helps create the crust edge.
Spoon about 1 1/2 tablespoons of the cream cheese mixture into the center of the scored square. Spread it gently within the border.
Arrange a few slices of strawberry on top of the cream cheese filling.
Repeat this process for all 12 pastry squares.
Brush the scored edges of the dough lightly with the beaten egg wash.
Bake for 15 to 18 minutes, or until the pastry is puffed and golden brown.
While the danishes cool slightly, whisk together the powdered sugar and milk in a small bowl until smooth to create the glaze.
Drizzle the glaze over the warm danishes before serving.
Notes
You can use frozen puff pastry sheets for a more traditional flaky texture. Thaw them completely before cutting.
If your strawberries are very juicy, pat them lightly with a paper towel before placing them on the filling to prevent the pastry from becoming soggy.
For a richer flavor, substitute the milk in the glaze with heavy cream.
