1 cup strong cold brew coffee concentrate
1/2 cup water
1 cup fresh or frozen strawberries
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup heavy whipping cream
2 tablespoons milk (dairy or non-dairy)
1 tablespoon powdered sugar (for foam)

Instructions
Make the strawberry syrup: Combine strawberries, water, and granulated sugar in a small saucepan. Bring to a simmer over medium heat, stirring until sugar dissolves and strawberries soften, about 8 minutes. Mash the strawberries slightly.
Strain the syrup through a fine-mesh sieve into a clean jar, pressing down on the solids to extract liquid. Discard solids. Stir in vanilla extract. Let cool completely.
Prepare the cold brew: If using concentrate, mix 1 part concentrate with 1 part cold water. If you do not have concentrate, use 1 cup of strongly brewed chilled coffee.
Make the cold foam: Combine heavy whipping cream, milk, and powdered sugar in a bowl. Use an electric mixer or a handheld frother to whip until soft peaks form. Do not over-whip.
Assemble the drink: Pour 2 to 3 tablespoons of the cooled strawberry syrup into the bottom of a tall glass. Fill the glass with ice.
Pour the prepared cold brew over the ice.
Gently spoon the strawberry cold foam topping over the coffee. Serve immediately.
Notes
For a thicker syrup, simmer the strawberry mixture for a few extra minutes to reduce the liquid content.
If you prefer a less sweet drink, reduce the granulated sugar in the syrup to 3 tablespoons.
Use whole milk or half-and-half instead of heavy cream for a slightly lighter foam, though it will be less thick.
