A recipe for soft, yeast-raised donut rolls featuring a sweet strawberry flavor throughout the dough and a bright pink strawberry glaze.

  • 1 cup whole milk, warm
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar, plus 1 teaspoon for yeast
  • 2 large eggs, room temperature
  • 1/4 cup unsalted butter, melted
  • 3 1/2 cups all-purpose flour, plus more for dusting
  • 1/2 teaspoon salt
  • 1/4 cup freeze-dried strawberries, finely ground
  • Vegetable oil, for frying
  • 1/2 cup powdered sugar, for glaze
  • 2 tablespoons strawberry puree (from fresh or thawed frozen strawberries)
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the warm milk, yeast, and 1 teaspoon of sugar in a small bowl. Let stand for 5 to 10 minutes until foamy.
  2. In a large bowl, whisk together the remaining sugar, eggs, and melted butter. Add the yeast mixture.
  3. In a separate bowl, whisk together the flour, salt, and ground freeze-dried strawberries.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a shaggy dough forms. Knead the dough on a lightly floured surface for 8 to 10 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 to 1.5 hours, or until doubled in size.
  6. Gently punch down the dough. Roll the dough out into a large rectangle, about 1/2 inch thick.
  7. Roll the rectangle tightly along the long edge to form a log. Pinch the seam closed.
  8. Slice the log into 12 equal pieces (about 1 inch thick). Place the rolls cut-side up in a greased 9×13 inch baking dish, leaving a small space between them.
  9. Cover the dish and let the rolls rise again for 30 to 45 minutes, until puffy.
  10. Heat 2 to 3 inches of vegetable oil in a deep pot to 350°F (175°C).
  11. Carefully fry the rolls in batches, turning once, for about 1 to 2 minutes per side until golden brown. Remove with a slotted spoon and drain on a wire rack lined with paper towels.
  12. While the rolls cool slightly, prepare the glaze: Whisk the powdered sugar, strawberry puree, and vanilla extract until smooth. Add more powdered sugar for a thicker glaze or more puree for a thinner one.
  13. Dip the tops of the warm rolls into the glaze or drizzle generously. Serve warm.

Notes

  • Grinding freeze-dried strawberries into a fine powder provides intense flavor without adding excess moisture to the dough.
  • If you prefer baking, place the risen rolls on a parchment-lined baking sheet and bake at 375°F (190°C) for 15 to 18 minutes until lightly golden.
  • For a richer dough texture, substitute 1/2 cup of the flour with bread flour.
