  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 cup cooked rice
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 bell peppers, any color, halved and seeded
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  3. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more.
  4. Pour in the diced tomatoes and tomato sauce. Add the cooked rice, Italian seasoning, salt, and pepper. Stir to combine.
  5. Bring the mixture to a simmer, then reduce heat and cook for 10 minutes, stirring occasionally.
  6. Arrange the halved bell peppers in a baking dish.
  7. Spoon the meat mixture evenly into the bell pepper halves.
  8. Cover the baking dish with foil.
  9. Bake for 30 minutes.
  10. Remove the foil and sprinkle the shredded cheddar cheese over the top.
  11. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Notes

  • Feel free to use any color of bell peppers you have on hand.
  • For a spicier kick, add a pinch of red pepper flakes to the meat mixture.
  • This recipe can be made ahead and reheated.
