12 Medjool dates
4 ounces soft goat cheese, room temperature
12 walnut halves
1 teaspoon honey (optional)
Pinch of flaky sea salt (optional)
Instructions
Preheat your oven to 350°F (175°C).
Slice each date lengthwise down one side, creating a small pocket. Remove the pit if necessary.
Carefully stuff each date with a small amount of goat cheese. You want a balanced filling.
Place one walnut half on top of or inside the cheese filling of each date.
Arrange the stuffed dates on a baking sheet lined with parchment paper.
Bake for 5 to 7 minutes, just until the cheese softens slightly and the dates warm through.
Remove from the oven. If desired, drizzle with a tiny bit of honey and sprinkle with flaky sea salt immediately.
Serve warm or at room temperature.
Notes
Use soft, room-temperature goat cheese for easy stuffing.
Medjool dates work best because they are large and soft.
Taste the cheese first; if it is already salty, skip the added salt.
