These stuffed zucchini boats are a hearty and healthy dish. They use giant zucchinis, filling them with flavorful meat, herbs, and cheese. This baked dish makes delicious use of summer squash.

Ingredients

  • 2 large zucchinis, about 2-3 pounds each
  • 1 tablespoon olive oil
  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can crushed tomatoes
  • 1/2 cup beef or vegetable broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the zucchinis. Cut them in half lengthwise.
  3. Use a spoon to scoop out the flesh, leaving about a 1/2-inch border. Dice the scooped-out zucchini flesh.
  4. Heat olive oil in a large skillet over medium heat. Add the ground meat and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  5. Add the chopped onion and minced garlic to the skillet. Cook until softened, about 5 minutes.
  6. Stir in the diced zucchini flesh, crushed tomatoes, broth, oregano, and basil. Season with salt and pepper. Bring to a simmer and cook for 10-15 minutes, or until the liquid has reduced and the mixture has thickened.
  7. Place the hollowed-out zucchini halves in a large baking dish. Spoon the meat mixture evenly into each zucchini half.
  8. Sprinkle the mozzarella and Parmesan cheeses over the top of the filling.
  9. Bake for 25-30 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
  10. Garnish with fresh parsley, if desired, before serving.

Notes

  • You can substitute ground chicken or a plant-based ground for the beef or turkey.
  • Add other vegetables like bell peppers or mushrooms to the filling for extra flavor and nutrients.
  • For a spicier kick, add a pinch of red pepper flakes to the meat mixture.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
