  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup graham cracker crumbs
  • 2 tablespoons melted butter
  • For the Sugar Plum Topping:
  • 1 cup fresh or frozen plums, pitted and chopped
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • Pinch of ground cinnamon

Instructions

  1. Preheat your oven to 325°F (160°C). Line a mini muffin pan with paper liners.
  2. In a medium bowl, beat the softened cream cheese and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract until just combined. Do not overmix.
  4. In a small bowl, mix the graham cracker crumbs and melted butter. Press about 1 teaspoon of the crumb mixture into the bottom of each mini muffin liner.
  5. Spoon the cheesecake batter over the crusts, filling each liner about two-thirds full.
  6. Prepare the topping: Combine the chopped plums, brown sugar, lemon juice, and cinnamon in a small saucepan. Cook over medium heat, stirring occasionally, until the plums break down and the mixture thickens into a jam consistency, about 10-12 minutes. Let cool slightly.
  7. Place a small dollop (about 1/2 teaspoon) of the cooled sugar plum topping onto the center of each cheesecake bite.
  8. Bake for 15-18 minutes, or until the edges are set. The centers might still look slightly soft.
  9. Turn off the oven and let the cheesecakes cool in the oven with the door ajar for 30 minutes. This prevents cracking.
  10. Remove from the oven and cool completely on a wire rack. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • You can make the sugar plum topping a day ahead and store it in the refrigerator.
  • For an extra festive touch, sprinkle a tiny pinch of ground cloves into the plum topping while cooking.
  • If you do not have mini muffin liners, you can use a well-greased mini muffin tin.
