This Sun-Dried Tomato Pesto Pasta Bake is a comforting and flavorful oven-baked dish. It combines pasta with vibrant sun-dried tomatoes and creamy pesto, all topped with melted cheese for a satisfying meal.

  • 12 ounces pasta (penne, rotini, or your favorite shape)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1 cup prepared pesto
  • 1 (15 ounce) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 cup shredded mozzarella cheese
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Cook pasta according to package directions until al dente. Drain and set aside.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the chopped sun-dried tomatoes, prepared pesto, crushed tomatoes, and heavy cream to the skillet. Stir well to combine.
  5. Bring the sauce to a gentle simmer. Stir in the 1/2 cup of Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper to taste.
  6. Add the drained pasta to the skillet with the sauce. Toss gently to coat the pasta evenly.
  7. Pour the pasta mixture into a 9×13 inch baking dish.
  8. Sprinkle the shredded mozzarella cheese and additional Parmesan cheese over the top.
  9. Bake for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden.
  10. Let it rest for a few minutes before serving. Garnish with fresh basil leaves if desired.

Notes

  • For a richer flavor, use homemade pesto if you have it.
  • You can add cooked chicken, shrimp, or vegetables like spinach or zucchini to make it a more complete meal.
  • If you prefer a less creamy sauce, you can reduce the amount of heavy cream or omit it and add a little pasta water to loosen the sauce.
